Sparkling white wine made using the Ancestral method which creates a natural sparkling wine style known as Pet-Nat. Produced by Somiavins who are located in Pla del Manlleu, Penedès region, Tarragona. This wine is made using Parellada grapes, grown in calcareous soil at 550m altitude, following organic and biodynamic farming practices. The grapes are directly pressed with their stems into a horizontal press, where spontaneous fermentation occurs with indigenous yeast. The wine is bottled before first fermentation is complete, which will complete in the bottle. It is then aged on lees for a minimum of twelve months before being disgorged by hand. The 2018 vintage produced just 750 bottles.
